Old Fashioned Sweet Potato Pie

6 to 7 medium sized sweet potatoes
3/4 stick Earth Balance Natural Buttery vegetable oil spread or 1/2 block silken tofu*
1/2 to 3/4 cups unbleached flour
1 tsp. salt
1 tbsp. coriander
1 cup Florida Crystals sugar (or other healthy raw or cane sugar)
1/2 cup Sucanat sugar
4 tbsp. maple extract
2 tbsp. vanilla extract
2 tbsp. black walnut extract
Favorite pie crust recipe (2 recipes)
 
1.  Steam sweet potatoes for about 1 1/2 hours or until done.
2.  Allow potatoes to slightly cool, and then peel skin off.
3.  Mash potatoes in a large mixing bowl and add 3/4 stick margarine (or silken tofu). Blend well.
4.  Add sugar, Sucanat, salt, coriander, flour and extracts. Blend until smooth.
5.  Pour into two pie shells and bake at 375 for 50 minutes to 1 hour or until done. Cool and serve. May freeze up to 3 months for later use.
*You can use silken tofu instead of margarine if you are trying to cut back on your use of oil.
